Super Bowl Fun with White Bean Chicken Chili


A savory Super Bowl!!! Our famous White Chicken Chili (featuring smoked chicken on the Big Green Egg!) in traditional Blue Willow cups -absolutely Charleston!! and extraordinarily accompanied by a wonderful charcuterie tray featuring a real honey comb in the middle!!!

We definitely had wings for Super Bowl - but since we had just smoked a couple of chickens on the Green Egg, I thought how delicious to use it for soup for our gathering of friends!

Ingredients

2 tbsp Olive Oil

1 onion diced

1 1/2 to 2 cups pulled smoked chicken

1 and 1/2 cups of broth from the smoked chicken

1/2 cup of regular chicken broth

1/2 cup of water

1 jar of Herdez Salsa Verde 16 oz

3 cans of white cannillini beans

6 tablespoons of chili powder (yes six tablespoons to really give it flavor!)

1 tablespoon cumin

Season to taste with Salt and Pepper as you cook

Boil smoked chicken in 2 cups or more of water for broth and the chicken will also fall off the bones - strain it and let chicken cool before picking off meat to be used for the soup. This broth makes the soup absolutely delicious.

Saute the onion with the olive oil in a large pot. Add the water, chicken broth, smoked chicken broth, all spices, salsa, chicken and beans. Bring to a slight boil, then reduce and simmer for 1 hour checking and adding more water or chicken broth if necessary.

Serve with sour cream, monterey jack cheese, cilantro and you can do tortilla chips and slices of avocado if you like.
