Skinny Muffins

Trying to eat more protein, less carbs and gluten and more veggies? These muffins are game changers, bake ahead and pull one out every morning for breakfast or a snack. They travel well, I just wrap one in a paper towel and pop in the microwave for :30! Thanks to our friend Laura Vardell for sharing the idea! Mix and match ingredients, whatever you have on hand will work (mushrooms, sun-dried tomatoes, etc.)
You’ll need a jumbo muffin pan (non-stick)
10 eggs
1 bag fresh spinach
2 tsp garlic salt
Drizzle of EVOO
Turkey sausage crumbles (like Jimmy Dean)
Shaved Asiago/Romano/Parmesan Cheese (like the Trader Joes mix—or any mix of cheese you like)
Wilt a bag of fresh spinach in a sauté pan with just a few drizzles on EVOO and some garlic salt
Whisk about 10 eggs ( I use an immersion blender for this)
Pour even amounts of egg in each muffin well, top with wilted spinach and turkey sausage crumbles (already fully cooked)
Top with shaved Asiago/Parmesan mixture (hard cheeses have fewer calories and this blend packs a ton of flavor)
Pop in a preheated 350 degree oven, check after 30 mins, mine usually take around 45 mins.
Test with a toothpick, if it comes out clean, they’re done!! If you’re on Weight Watchers these have like 2 pts—if that.
