Happy New Year!

Best Hoppin' John this year! Waiting to add the crispy fried bacon until the last minute keeps it crunchy and more flavorful since it doesn't get steamed. The onions cooked in the bacon grease gave it plenty of bacon flavor throughout. Serving everything in blue and white is casual, and so appropriate here in Charleston...and don't forget the rice spoon.
